Easy Thanksgiving Recipes

These holiday recipes are so yummy, you might just be tempted to make them the whole year through. They are tried and true recipes which have survived the scrutiny of my four boys.

Mom’s Apple Crisp
5 lb. apples, peeled, cored, and sliced
1 c. brown sugar
1 c. rolled oats
1 c. flour
2/3 c. soft butter or margarine
1 ½ tsp. cinnamon
1 ½ tsp. nutmeg (optional)
Sugar and cinnamon, to taste
Layer apples in a 9x13 inch pan until close to the top. Add sugar and cinnamon to suit your taste (more sugar and cinnamon if you like it sweet, less sugar and cinnamon if you prefer the natural taste of the apples). Mix remaining ingredients with pastry blender until choppy. Spread over apples. Bake at 375 degrees for 35 minutes.
Pumpkin Bars with Cream Cheese Frosting
For the bars:
4 eggs
2 c. canned pumpkin
2 c. sugar
1 c. oil
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 ½ tsp. cinnamon
1/8 tsp. allspice
1/8 tsp. nutmeg
1/8 tsp. cloves
Beat eggs, pumpkin, sugar, and oil until smooth. Add remaining ingredients and beat until smooth. Pour into a 11x15 inch pan and bake at 350 degrees for 30 minutes.
For the cream cheese frosting:
2 ½ c. powdered sugar
1 stick butter, softened
3 oz. cream cheese
1 tsp. vanilla
1 tbsp. milk
Beat until smooth. Spread over cooled pumpkin bars.

Easy Cranberry Relish
1 bag (12 oz.) fresh or frozen cranberries (do not thaw)
1 can (8 oz.) crushed pineapple
1 c. sugar
¼ c. orange juice
Combine ingredients in nonreactive saucepan. Bring to a boil over medium heat; reduce heat and simmer, just until berries burst. Remove from heat. Stir in 1 tablespoon minced crystallized ginger (optional). Refrigerate until ready to serve.
Praline Sweet Potato Bake
3 cups cold mashed sweet potatoes (about 2 lbs.)
1/3 c. milk
¼ c. packed brown sugar
¼ c. butter or margarine, melted
1 egg
1 tsp. vanilla extract
½ tsp. salt
1/3 c. packed brown sugar
1/3 c. chopped pecans
3 tbsp. all-purpose flour
3 tbsp. butter or margarine, melted
In a mixing bowl, beat the sweet potatoes, milk, brown sugar, butter, egg, vanilla, and salt until fluffy. Transfer to a greased 1 ½ qt. baking dish. Combine topping ingredients until blended; sprinkle over the top. Bake, uncovered, at 350 degrees for 30 to 35 minutes or until golden brown.
